VINIFICATION
The grapes grown in Vermentino and Fiano di Avellino are harvested manually and vinified. The vinification process begins with a cryomaceration for about 3/6 hours, followed by a fermentation in steel with the addition of selected yeasts at a controlled temperature of 16 ° C.
